I'd go for a 14.2, any build. Your weight wouldn't be an issue at all and height wise really you could ride anything but may be over horsed with anything above 15hh.
Calm and condition(small amount), hi fi original, codlivine general supplement, magnesium and garlic. She is getting a bit round now though so i am thinking of changing to happy hoof or something similar. All depends if they need the calories or not to maintain weight.
Try apple chaff. But to be honest as long as she's eating hay then I wouldn't worry toooo much. Could you try and get her on to haylage as it has a higher feed value.

Allen and page do a special sugar and cereal intolerance diet. Might be worth looking into this. I'm not sure how good it would be though for keeping weight on?
