I have been having lessons on a simulator with a dressage instructor. I'm only on my third lesson and feel it has made quite a significant change to my position already.
I like the fact that you can concentrate on your seat and aids and don't have to worry about the horse.
The only downside...
I agree, I couldn't believe it either. I don't know if its because we're not very rural so they are buying from feed shops, which there are only a couple of within our area and 1 of which I know aren't selling any at the moment as they don't know if they will have enough for themselves.

I am in exactly the same position as you. I just hack at the weekends when i can. Last year I bought a book called 'Cobs Can, handbook' and it gives you lots of inhand exercises to do which you can then implement in your riding. I just do it in the yard and it keeps us both ticking over.

I use equimins tranquillity herbs (contains the same ingredients as herbal calm) on my mare (5yo cob) over winter and noticed a big improvement in her, generally more relaxed and content. Hopefully it works for your boy.
