working cob is amazing, it is just like working hunter so dress is the same but the class is just for cobs, me and my boy have qualified for the SWPA working cob at the david broom centre this year, height of fences is ususally 2'9 you can find novice ones at 2'6' they are brilliant.
I would go for it if you have three established paces I would enter either a walk trot or a prelim at the end fo the day if the horse can canter you may aswell pay to get marked on all three paces rather than just two.
