I have the Charles Owen Pro 2 and don't find even in the middle of summer I don't have a problem with a sweaty noggin. Personally I would go for a skull with removable liner if such is available, if you tend to have a hot head...sorry I know not a lot of help really.
Do you have an instructor you trust and that knows you and your horse? If so have lots of lessons with them to help you regain your confidence. This is what I did after a nasty fall and it has made a massive difference in confidence, that and refinding my bloody minded determination to crack on.

Well maybe tell your instructor you don't want them to ride her and also consider if you feel you aren't making progress with not tensing up and anticipating an explosion this may not be the right horse for you to progress with. I truly hope you can get what you want out of having instruction...
I think your instructor is trying to help you by helping your horse and I would hope that you have picked an instructor that you trust to ride your horse and not someone who is going to abuse your horse when they get on, if you don't trust your instructor get a different one or don't have...
I would try to find somehere you can turn him out next to cows not with them, he will be stressed fir quite a while but eventually he should realise they are no threat. My lad is not enamoured with cows I can slow him down but dare not try to stop him, just the smell of them sets him off and...
