After Wagtails thread - how can you tell how much your horse can carry?

after wagtails thread about how much weight is your horse carrying, how can you tell how much they can carry?

i know things would depend with how much muscle, their age etc.. but is there a way that you can get a rough estimate?

I was always told to work on 20% of the horses body weight but like you said there are lots of other considerations as well.
