Agh My horse is driving me mad!! Help Please

Bought my mare in about early september as i wantedsomething to do over the winter. As my other two always have had time off in the winter. Bought her off a friend who needed to sell her as divorce ment that she needed the money. Now shes fantastically well schooled both over jumps and on the flat. But has moments where she throws her toys out of the pram for no reason what so ever. Shes done intro's and one pre-novice but she really lets herself down with these sudden out bursts. Recently i've been schooling her over some jumps (as i was going to do some JAS but no chance for the moment) and when i ask her to jump bounces she has these paddy's sometimes she'll jump the first element and then just set herself and tank off, or go up. The same happens at any moment when schooling or away at a comp.
I've been at a loss to what this is, Back, saddle, teeth and general MOT been done. Today i took her to my trainer she didnt put a foot wrong. He got on and rode her and said she was lovely and again she didnt put a foot wrong with him.
Sorry for the ramble i'm at a loss to what it could be.
Shes ridden in a Wow saddle. A Sprenger loose ring snaffle plain caversson. Just could do with some ideas of what to try with her bless her she really tries but has such an attitude.
 
she sounds a lovely type and you obviously have spent alot of time with her schooling etc, am wondering maybe could be a confidence thing, maybe make the bounce really really tiny and as she grows in confidence u will grow n then put it up! n dont forget some of the most talented horses are quirky as hell and take a long time to produce.
 
i try and really ride her through the tantrums. She settles back down after a while and realises thats what you want her to do. Just been thinking about her confidence issues, she tends to do it when you ask her to do something a little out of her comfort zone, e.g. shoulder in etc. How do i go about getting her more confident.

if it were me i would keep things very simple and repeat things on a sliding scale and subtle, b4 she knows whats goin on shes doin what you want!!! at the end of the day you have a fab horse and you dont want to upset her, is harder to go back and undo negativity than keep things slow, but forward and positive.
