Yes, I believe you can take horseriding. Well - at our school you can (this was for GCSE but I am guessing its much the same for AS and A level). You just have to have a proper instructer etc. I know for GCSE you have to take a video of yourself riding.

I took a video of me at a ODE for my GCSE and also my instructor had to talk to my PE teacher telling her all that I can do etc
I got a 10 riding a baby horse at 3"/3'3" so it's easy to get the marks
I don't know the spec for A Level but GCSE you had to show lengthened strides, good position, knowledge of the 5 phases of jump etc so I guess A Level will be more indepth
