Best way to keep weight on a lami/good doer?

Hi all,
My horse is looking fantastic, his weight is spot on. He is a native x, good doer, had mild lami this spring. After 3 weeks box-rest the vet fat-scored him 2.75 - 3.
Since then I have worked hard on keeping the weight off. I am delighted to say his girth had to be swapped for his 'smaller' one 2 months ago and today I had to put it up another hole. His fat pads have completely gone and he is looking excellent, you can feel his ribs and he had muscle contours on his shoulders etc. I would say he'd fat score about 2.25 now.
He is unclipped, in a light rug if needed (he's very hairy). He gets a 2.5 slices of unsoaked hay at night and 2 slices by day. His feed is 1/2 scoop fast fibre, a handful of chaff and handful high fibre cubes. He's been in for 2 weeks due to the awful mud! He's ridden at weekends at the moment.
The question now his how to stop him losing any more weight with the cold snap coming. I don't want him to end up skeletal, this is the thinnest he's ever been. But I also don't want to overload him with lami-causing nasties. Even eating haylage raised his pulses so I have to be very careful.
Would simply more hay be enough to keep him in good shape?
 
More hay and more exercise to ensure it goes on as muscle? Do you have any options to turn out in school/yard or pop on horse walker or similar?
 
Thanks guys. I've given extra hay tonight and will see if there's any left in the morning, I don't think ad lib will do him any harm now.
Exercise would be great, but it's not poss as I work during the week and have a young baby, so we're stuck to riding weekends. He does get an hour on the yard every day but he tends to just stand there waiting to get back in his stable. He's turned into a right homebody! He will be turned out all day once the dreaded mud is gone, but like a lot of peoples our fields are like bogs.

At last, someone else! :D I was convinced my lot were odd bods. Yes, it gave three of mine softer or loose poos. I have gone back to speedibeet. FF does have garlic in it but don't know if that's the cause of less firm poos for some.
 
Another vote for extra hay and speedibeet or you could try Fibrebeet (made by same people but with added conditioning properties). It's still got the Laminitis Trust mark. I used it with my lami prone pony and was really impressed with it.
