I did my stage 2 riding about 4 Years ago, can I now do the care or do I have to do both parts again?

no you should only have to do the care bit as long as you still have the certificate to say that you have passed it

You can do the care, as someone said - the Stages exams don't expire.
You could also work towards, and sit, your Stage 3 Riding, if you wanted, doing the 3 care later, too.
