My daughter's horse was ridden in a loose ring lozenge snaffle on her first hunt last season, and that is the bit used for all other activities. However this season the horse was so hyped up even before hunting she changed to a jointed 3 ring gag (that's the one with one large centre ring and smaller ring above and below it). She has slightly more control but not 100%. Trouble is, for a few days after a hunt she still needs to ride in this bit for control, then she settles down again.

We're reluctant to change to anything stronger, but would be open to suggestions to something different if it would help. Any suggestions?

You could try something with a waterford mouthpiece. They give extra brakes, but the horses seem to like them, they're not as strong as they look.
