Bit help!!

I have a 15hh Irish Sports Horse, to work on the flat she will be schooled in any bit, and favours a straight bar Pelham, but when it comes to jumping she gets very excitable, I have tried many bits but still having no luck keeping her together and concentrating.
On the approach to the jump she goes very forward and canters flat and any attempts to hold her back result in her bouncing, once going around a course she does slow down slightly but I’d still like to have something that holds her back more so she keeps her head and doesn’t get so excitable. I currently jump her in the second or third ring of a Dutch gag and a Mexican grackle as she crosses her jaw to ignore the bit, this has helped slightly but she is still racing to the jump. She is very well schooled in the flat and since her schooling has come on the height and scope of her jump has also. She is currently jumping around 4 feet. Any bits or advice that would be worth trying?!
 
Firstly, why do you school in a pelham if she schools in a snaffle? I would only ever school in a snaffle if the horse is controllable in one.
What bits have you SJ'd her in? It sounds like its more of a schooling issue in sj'ing than needing a stronger bit!

Have you or do you school over grid showjumps? That can slow a horse up and prevent flattness towards them!

I don't like up grading bits as the horse eventually gets used to it and your back to square one!
