what is the difference between a copper bit and a sweet iron?x

They taste different - some horses prefer sweet iron and some prefer copper.

Copper warms up in the mouth quicker as soon as the bit goes in and helps the horse to salvate.

Sweet iron is designed to rust thus getting a sweeter taste coming through as the bit wears, again to encourage a soft and moist mouth.
