Bit suggestion

Horse is in a plain single jointed snaffle currently, to my knowledge this is all he has been ridden in. Does not go fantastically in it but doesn't object to it. He has quite high head carriage and if he takes off its usually with his head up. He likes to "crunch" on his bit and play with things in his mouth (usually the reins when he is waiting for me to close a gate!).

While hacking he can sometimes trot a few steps forward if he gets spooked but nothing major and usually comes back to walk as soon as I ask. Today however he took off on 3 occasions!!! He has never done this before and there appeared to be no trigger for it, first time there was nothing around him and the last 2 there were cars but they weren't speeding or getting close behind him (actually very unusual for motorists in our area!).

Also while out on the gallops he can get a bit giddy and flat out gallop, without listening to me even when I try and steer him out of the long grass with hidden ditches!

I think it may be time for a change in bit to help me get some control as today he just flat out ignored me, even before he took off the first time. I don't want anything particularly harsh. The only thought I had was maybe a hanging cheek snaffle? But my bit knowledge is useless! So suggestions welcomed and also maybe a short explanation as to what effect the bit has so I could try and understand which may be better for him.

How are his teeth and saddle?

This could explain the sudden change in character.

Assuming these are fine, does he tank of with his head up or down? This will make a difference to the choice of bit.
 
His teeth are fine, they are checked every year and never any problems. Same for his back and his saddle fits him well. He goes with his head up but tends to lean on the bit meaning when he does take off my arms aren't in a very good position to pull against him!
