Biting advice please...

I am seeking some advice on behalf of my YO, she wants to do some pleasure rides this summer on her 11 yr old ISH mare ex-eventer, trouble is YO is very slight in build and struggles holding her when we are hacking in 'fun' places where there in canter/gallop potential-so at a fun ride with loads of ppl she will prob stand no chance! Anyway, horse is in a 2 ring gag (with one ring on top and one below bit) not sure if thats its name, with a french link middle, normally on standard hole, but put on the lower ring when going to fun places. Problem is that the mare will rear if she dosen't like whats in her mouth, she is extremly sensitive (am not sure if shes been treated roughly before they bought her as she will go up if even touched by a whip as well). An extremly well schooled mare in an arena, bit full of it out and about- any ideas? Would a 3 ring gag with 2 reins be any good? Any suggestions welcome?thanks...

Our mare sounds very similar. she is a chestnut id x who used to hunt. She is perfect in the school in a snaffle but a nightmare to hold out hacking. We tried gags but like this horse it caused her to rear. She is very happy in a rubber jointed pelham. She has a padded headpeice and we have padded the curb chain. In it she is controllable and very happy. If she is going somwhere particularly exciting girllf will sometimes add a standing martingale with elastic insert. Our mare also hates the whip - numerous have had to be abandoned on rides as even catching it in her eye line can set her off!
