Building stamina in canter

How do I build up Daisy's stamina in canter without her thinking that every stretch of grass is an opportunity to go for a run?

She is moderately fit but I'm working towards her doing some Jump Cross and maybe some small cross country. She will trot for hours but finds it hard to sustain the canter for as along as she would need to around a course. She is fine if we come back to trot frequently and then go back up once she's caught her breath but I need to move her onto the next stage.

All I can think to do is lots more canter but I don't just want to canter everytime we hit grass. She's never been the fizzy type but I don't want to start now.

She is a mw cob so not built for speed but should be capable of doing a small course.

Any training tips?

interval work.
get a decent field or gallop track.
canter for say 2 mins start the walk for 1 min tn canter for 2 mins walk for 1 min then graually increase the amount of canter you do.
ad also hill work is good for them.
