Hi,
When I applied to Vet School I wrote to just about every farm in the Yellow pages explaining that I wanted to gain experience working with farm animals. Less than 5% replied but I ended up with 3 jobs! (All unpaid though).
One of those was on a dairy unit but mostly involved helping out at milking times. It would be difficult to go with the idea of getting experience of calving itself as its a bit random when it happens and often in the middle of the night. If you managed to get taken on by a farm I should think you'd still get to see some and perhaps if you didn't live too far away the farmer could call you if one started at night time.
It might be easier to see if you can get a job at lambing time - with sheep being more seasonal you would be more likely to get more involvement in that side of things.
