I really enjoyed reading Paul Belasik's Dressage for the 21st Century. It has some gorgeous pictures in it as well.
Also have a really really old book by Jennie Loriston-Clark - cant remember the name of it for the life of me - but it used to be my Dressage Bible about 20 years ago.

I really like Carl Hesters book, I think it's called Dressage from Novice to Advanced. Very clearly goes through all the different ages and stages, and exercises you can do.
My favourite is the Reiner Klimke book "Basic training of the young horse"... it takes you step by step through the German scales of training and explains each really well with exercises for each level.
And it takes you through to collection - so it's not actually that basic at all.
I use Pathfinder Dressage by Penny Hillsdon, it has loads in it. From scales of training to how the likes of Ferdi, Jane Bredin, Vicki Thompson, Michel Assouline ect train. FAB
I`ve got the Dressage training tips and solutions and this is quite good and also the Carl Hester one, and the 2 thin ones on riding a test etc. The carl Hester one is good too, although it isnt a thick one and they are short tips, good to remember.
Strange really as jumping is my thing, but there are some good tips for flatwork.
