I have a 15.3hh Irish sports horse who loves jumping, however often I find that because she has such a big stride, when we try and do a bouncy, collected canter, she ends up going quite slowly or going back to trot. Any tips, as this makes jumping a continuous round quite hard.

It sounds like you may not be co-ordinating your aids quite right, a collected canter should come from a few half halts to drive from the rear into the rein, possibly your applying too much pressure on the rein and driving him forward just a little too late? That might get him to think you were asking for a slower speed rather than a change in shape.
