I'm considering horse box options (single capacity would be plenty for me and my small cob). I keep seeing references on Cheval Liberte distributor websites that as relates to the Cheval Liberte 1003xL Racer that: "It can in many cases be towed with a standard car driving licence." But is this the truth? Particularly for the Republic of Ireland?

And for anyone who has this model in particular, would you recommend it? Thanks in advance.

Highly unlikely, as a trailer + horse is unlikely to weigh less than the maximum laden weight permitted for using a B licence.
"Vehicles (other than motorcycles - mopeds - work vehicles or land tractors) with:
a design gross vehicle weight of 3,500kg or less, and seating for up to 8 passengers (apart from the driver).
These include a trailer when the trailer's design gross vehicle weight is 750kg or less."
