Is there a book that I can buy that explains all the different class types, along with the appropriate 'what to wear' for both pony & rider?

No idea if there is a book but there is plenty of info online which you can look at to help but as a basic guide, I think you mentioned having a Connemara, if he is registered you have numerous options to show him in various M&M classes provided he is not over height, a max of 148cm is the breed standard which most shows will require, if over height you will have to do more generic classes depending on the type he is and the riders age.
For all classes, except show ponies which he is not if a connie, the rider wears tweed jacket, shirt and tie, brown gloves, beige/ canary/ fawn jods and either long black boots or short brown ones, a navy velvet hat is preferred or a velvet slik if a skull cap is worn.
Pony plain brown, preferably, bridle with flat noseband, saddle not too forward cut with a discrete saddle shaped numnah usually also in brown, for M&M classes the pony is left unplaited if doing non M&M then plaited is correct.
