cob type help

I am a bit confused as to what to do with my cob showing wise! when i say cob she has 8" of bone, def a LW - hardly any feather, skew bald, long nativey type mane and tail not overly thick like a traditional cobs is. She has a shorter back, thickish neck, quite sturdy and wide. She has a pony-type face and stands at 14.3hh and is almost 4. I am wanting to show her under saddle next year and do a bit of dressage. I have shown her inhand but didn't do too well and i think its because of her turnout (and shes a bit over weight - working on this!!)!! i would describe her as a native type.
I don't want to post a pic if thats okay as dont want to be recognized :o
So do i:
1) clip her legs pull mane/tail & plait for shows - now what classes would we be eligable for??
2) trim her mane a little and tidy up but don't go the hole hog (excuse the pun :D)
3) hog Hog HOg HOG!

Also can someone tell me what classes we would be eligable for if any of the above options are chosen.
I plan to show her in a black hunter bridle with thick noseband/browband, snaffle to start with depending on where we go, discreet numnah, tweed jacket, tie and shirt, canary jods (subtle ones not corn fed chicken ones) cane, long black field boots (leather) brown gloves, navy hat with leather harness.
