After digging the drainage for my new manage im left with a whole load of top soil. I want to make a X-C bank with this but need help with dimensions and design  I would like slope-up&slope off and also jump up and off. Any ideas or tips would be most welcome. :)

it might be worth getting a proper course-builder to advise, you don't want to risk the soil subsiding or something. i've seen pics of a bank being made, with a huge tractor tyre buried in it, wires from that to the front sleepers of the bank for stability, then all filled in with soil etc.
the slope up - slope off bit won't matter about distances really, obviously, but to jump on and off you probably want at least a stride across the top (so, probably 6-8 yards) but if you have enough soil i'd probably go for more, say 2 strides (10-12 yards at a guess).
i'd prob go to a local xc schooling course and check out their banks, work out which one would work best for you, better to do it right first time! good luck!
