I'm sure I read once that the dressage saddle will have knee rolls, and the WH won't.

No both have knee rolls. at least mine have.....
I had a WH saddle for my cob. and a VSD for my IDx. There isnt much difference between the two tbh. Not as far as I can see anyway. I think the working hunter is probably slightly more rounded at the front than the VSD.
Someone on here might be able to shed more light than me.

VSD stands for very slightly dressage so would have flatter shaped panels at front whereas I guess the WH will have rounder panels, think that's right

It really depends on the make. My ideal WH has quite a shallow seat, whereas the last VSD (cant recall make) was much deeper.
I far prefer the WH to ride in & I can jump over 3ft / hunt & do anything in it.
