Different tasting hay bales?

I bought in some bales of last years hay for my boy recently and give him some in his field stable to munch as he wants. He has been picking at it but not really eating a huge amount as such but just put that down to him eating grass too. Yet whenever I open up the spare stable he sticks his head in there to grab some of the hay stacked up...even though he has plenty of the same and it is the same hay?
I opened a new bale this week and he has a real taste for this one and is scoffing it like no tomorrow...from the same batch?????
My questions is does anyone else find this and can it really vary that much when it is from the same batch?

My lot are the same with the haylage, some bales they scoff it and the others they take their time eating it. Sorry im sure that doesnt help you

One of ours used to be able to tell if a different person had put her hay in for her and although she was very gutsy she would mess about with it if we hadn't handled it. Don't know if that helps at all.
