Dressage/flatwork help?

Right as some of you may know i've decided to experiment and do a bit of dressage with my 17hh sjer. anywho i started riding her in a dressage saddle and found that her already pretty extravagant paces became even better. i've ridden her in the double bridle and she's doing all the work required for elementary quite nicely. however i am having trouble containing her sometimes. its like she boils over for a few strides then i get her back again. i notice it particularly moving from collected up to medium. whats weird though is i can move up and back to extended no problem. has anyone any ideas that could help. i'm having lessons with a dressage trainer next week or the week after but just wanted some help if anyone had any ideas. for the first time ever i actually feel a bit overhorsed...and i've jumped her up to 1.30, schooling 1.40 at home so i'm not overhorsed at least not over fences anyway! just stuck to walk and trot today rather than try to force containing her canter till i had a better handle on the trot work. the transitions are good and balanced its just holding the pace together once i establish it. ok i think i've rambled enough, sorry and choc for anyone who got through all that! double choc if you have any ideas to help!!
