Eating stable..am I feeding enough fibre?

Hi,
My mare has decided to start eating the wood in her stable, I'm not sure if she is just chewing and spitting it out or actually eating it.
I did a quick search and there are 2 thoughts..
1, mineral deficient
2, boredom and not enough fibre

She is a good doer and is only in at night. She gets 2 scoops hi fi apple, and half scoop speedibeet twice a day and about half a bale of hay over night too. She just has a vit and mineral supplement added too. Am I giving enough fibre?
It's a bit of a random thread but any suggestions please? Thanks muchly!!
 
One more thing to consider is that if you feed an overly rich vitamin suplement such as a cod liver oil based one, high in vitamin D ,you can induce this wood chewing. (to cut a long explanation short, vitamin D cannot be eliminated from the body ,it has to be used. The principle use is bone production or the laying down of calcium di phospate in soft tissues. To get rid of an excess ,phosporous will be needed and the wood chewing is a result.) Beware of vitamin suplements high in vitamin D .
