I think you could get away with just the one 'wait!' he doesn't even look as if he would have broken the first one, well done you!

Yes, I agree. He probably would've waited after the first "wait" command. I repeated it as this was the only second time I'd gone from "trust" to "wait" after our chat via pm. I guess I was using repetition to try and confirm the new word to him....although as I said to you, I think the tone of the voice probably helped set the scene, so to speak, anyway.
I had initially let him "take it" almost instantly, but have started to increase the length of time between command and reward. I'm sure he could wait longer on a single command though. I will try it.

Try it less and less so that he does not get bored - only repeat if he breaks the initial 'wait' and move the food away, so he sees that when he breaks, he gets no further forward in getting what he wants. Not that it looks as if he will break
I am not talking about you at all, but it drives me nuts when people go 'sit....sit....sit....' - the dog is not going to sit on the fifth time of asking if he didn't do it the first time
