Few questions - simple foal training but one day a week?

Treena is a week off 7 months old now, I used to be able to work with her a few days a week and I did a lot of the leading/feet/general manners work with her when she was younger.

I only work at the rescue centre on Sundays now since I had to get a full time job, but I think not a lot is being done with her in terms of training any of the other days at the moment, mostly due to lack of time, very stretched during winter!
It's not a problem at all, she is a very well mannered girl. She leads perfectly, ties up, picks her feet up etc.

But I'd like to do a bit of stuff on what she isn't so good at like reversing, personal space (she is going through the unzip everyones clothes phase :o), etc... just general stuff we can do together.

My main questions I suppose are:
Is half an hour once a week going to make any difference at all? (I am in the same boat timewise but I should be able to squeeze a bit of work in). Especially if she is being handled by various people during the week.

What do you use as a reward for training youngsters - pat on the neck, verbal praise, carrot sticks? ;)

What's the easiest way to get them to learn about personal space?

Any suggestions of things we can do that are nice and easy but will just keep the idea of "I'm the boss and she should do these things when I tell her to" in her head :p
