we keep our horses on grass livery. We have plenty of grazing and exercise our horses in the field. The field drains well and is not hilly or on a slope. Unfortunately it is very uneven with lots of dips etc. We would like to level an area off about the size of a football pitch so we can school, jump and train our horses for polocrosse. Any land or pitch experts could you please give us some advice on how we can create a flatter surface over a large area. thank you

No expert but be careful as those dips are probably important for the drainage of the field so you might need to think about piping them, but no reason why you can't prep an area like you suggest.
 
Impossible to say without seeing but the dips etc might represent archaeology of some sort. Tho this may not be a concern for you!
