Fittening slipped stifle

I am hoping to rebreak my 15 yr old broodmare. She is quiet andwilling, easy to do. As she has beenused only for breeding most of her life she lacks topline and muscle tone. I have begun walking out in side reins fitted long. Walking and gentle trot on lunge again in side reins. The last couple of days I noticed her stifle slipping on lunge only downward slope, shehasn't gone lame.
I want to build her up with slow roadwork and straight lines hill work at walk and trot, see if the stifle is going to continue to be a problem. As she is not yet ready to back and ride away I plan to lead her from my other horse. Should I use side reins whilst leading? Once she is fitter and more toned I am hoping she will be able to break and hack without stifle issues...obviously I need to keep working in the school and on lunge to a minimum, she is a big mare and I am not confident about jumping on and hoping for the best without some graoundwork being established first. at least a mouth and brakes although steering would be handy! any thoughts? She lives out at present on a hillyish field and is in good health generally. Thanks for any advice.
