Following on from Saddle fitting

I have a round cob with no wither and have the Wintec Wide saddle. The panels fit nicely to his back and there is no bridging but I am unsure if I have the correct gullet in it. The purple is far too wide and I am trying the white one but would like to know how tight it should be against the wither and shoulder for a correct fit? Should you be able to fit your fingers in easily when it is girthed up? The saddle is sitting level but there is a lot of clearance from the wither and pommel. I did buy the Barefoot treeless but I'm finding it too big for my bum and am sliding around in it.
 
I have always been told that you should be able to run your fingers between the shoulder and saddle with out too much difficulty and be approx 4 fingers depth away from the wither.

I stand corrected if this is wrong
