I would like to understand much more about the correct trimming and shoeing of my horses. Is there a definitive source for this info? Can anyone recommend a book that will educate me.

Also 'Adam's lameness' but this is hard to read if you are not used to reading vetinary journals or such as it is written for vetinary professionals.
To be honest, understanding foot balance is not the issue.. being able to see it is.. and this only comes when you look at a thousand bandly balanced feet and then you come across one that is balanced and you take a step back and go 'WOW NOW I KNOW!'
Its a serious 'URIKA!!!' Moment to be honest.
But failing all else.... grill your farrier.. go out forthe day with him.
Thanks for suggestions so far. I am finding the more I look into the subject the more confusing it gets. One question I am trying to find the answer to is....should a foot always be level, i.e. both heels match, both walls match and should it always land heel first. (If the answer is yes, I've got problems).
Erm. if your horses heels are landing first i would be extremly worrid.!
For your case, yes the hels should be the same length and the foot should be even al the way around.. In some cases to balence the foot and t prefent lameness it is necessary to level the foot by leaving once side longer.
It gets very complex and as i said... youll not understand it till you see it and then it wil hit ya like a ton of bricks. You got on to hoof axis yet? lol
