good dressage saddle?

next year, i'm going to buy a dressage saddle for my youngster. I hate riding in the gp and its just a wintec.
However, I would like something with changeable gullets or else a second hand leather that i wont lose money on. so can you recommend any.
my budget is £600.
my boss has a gorgeous devoucoux that i absolutely love but the price is so high even on the second hand ones!
also like the bates ones, anyone have any good reviews for them?.
