OH and I went on a lovely beach ride at Studland Bay. Highly recommended. I remember the horses being very easy and quiet. We cantered on the sandy beach, but with leather tack and we did not go in the water.

Studland trecking centre now requires formidable advanced rider standards. Clients must be able to canter in a fast group.
OH and I were quite novice in canter but we were none the less allowed to go on a private hack there and cantered on the beach with an escort. It was lovely.
OH and I both learned to ride in old age and it is worth saying a RS internet statement of required standards may not always be the last word. By the time we went to Studland, I had cantered miles but not very fast and not in a group. The same is true today.
So in your place, I would always ring up and discuss and be honest.
We were in the area on holiday last summer and spent an afternoon on the beach. I made up my mind that I might ask to hack there again. But their beach riding is now limited to the winter months.

Studland is several hours away from the South Hams though!

Its probably too late now but Emily and Alex Farleigh at Dittiscombe have some nice, well schooled horses. Better for lessons than hacks as not near the moor.
