So, where to start? To be completely honest, I know next to nothing about horses or equestrian matters!
But I am a writer of so called fan-fiction, and I am also a Brony (to the uninitiated, that's an adult fan of My Little Pony Friendship is Magic!)
I am just about to start writing an MLP themed story, but i plan to make the ponies anatomy and instinctive behaviour accurate, which is why I'm here, to ask a few questions, and hopefully get a few answers!

The colour atlas of the horse is the best and fun way to learn anatomy and physiology.
I would say that you are looking at an animal which evolved from a tiny animal browsing on the forest edges and then moved on to the prarie where it had to flee from predators.
For this reason it has excellent [nearly] all round vision, excellent hearing and mobile ears. In the wild horses had to be on the alert as their predators were very stealthy, so horses are always looking for things to spook at as anything could be a predator, a rock can have the shape of a lion. They are herd animals, and when they sleep they leave one standing on guard.
