Could show a couple of bits/bit pictures and ask them to name
Show a picture of a grey horse and ask them what the correct term is for that colour, same with piebald and skewbald/palamino.
Ask them to write down 3 different types of nosebands
Ask them to name 3 different types of native ponies
Ask where the cantle/pommel is on a saddle
 
The Pony Club used to do a little book of quiz questions. My riding club used to have a box of Trivial Pursuit type horsey questions for quizes, i think they came from a horsey charity.
 
Why do we mount from the left (near side)?
A - to stop us getting tangled up in our sword scabbard (which would be on the left side of us as most of us are right handed).

What is the sequence of footfalls in canter left?
A - Right hind, left hind and right fore together, left fore

What was the name of Alexander the Great's horse?

etc etc etc.

If you have a bank of ponies they know (like a RS environment) list horse colours and ask them to name which pony is that colour.

Number of footfalls in walk/trot/canter/gallop

Name a famous: Rider, Horse, Horse Race, 3-day event.

Ask them to draw school movements like 3-loop serpantines, 10m loops etc...

I did a quiz at lunch time on the own a pony day using these sorts of questions and it seemed to go down well
