Basically picking up pony thats free and need a contract/receipt writing to show all legal ownership and responsibility has been handed over to me. How should I go about writing it?

I'd pay them a pound. Then get a normal receipt. If you have a recipt book stick it in this if not a piece of paper stating that you have bought pony. Take passport with her.

Something like:
Confirmation of the sale of (pony name and registered name if it has one) from (seller name and address) to (your name and address) for the sum of one pound received by seller on (date).
Horse passport number, breed, age and brief description.
They could put something like (pony name) is sold as seen/as a companion only if applicable.
And both sign at the bottom (might as well have a witness as well if there is one).
When I bought my horse we did this by email and would send back and forth via email so I would send deposit, she confirmed then I sent money and got receipt etc.
