Hope this isnt somewhere else in the forum - I couldnt find it...

Mum and I were contemplating making something for the hip flasks this year - other than the usual Damson Gin,

However we may have left it a bit late!!!!

We have plenty of Plums, Damsons ect in the freezer and gardens - and can source lots of other goodies...

Does anyone have any good recipies that dont take 8 months to mature!!
If not - add your usual favourites ready for next year!! :)

Sloe gin! I have some friends that make it sept/oct time and have it in hips by dec time.. The longer to brew the better though.. I think you could get away with making it now get your sloes and freeze them! Cos they look ready atm,

blackberry/raspberry gin/brandy/vodka
1.5l bottle
1l bottle of gin/brandy/vodka
300g blackberries or raspberries
330g sugar
(adjust according to size of bottle)

Put fruit into bottle
Add sugar
Add alcohol
Gently shake bottle every day for a week (until sugar is dissolved)
Then do it weekly (or whenever you think about!) for 2/3 months
I always leave the fruit in until either I finish the bottle or if I have some drink left at the end of the season I then remove the fruit.

I use the above recipe for everything just change fruit/ spirit

We also have branches laden with damsons, as last year, and last year I did the pound of fruit and the pound of sugar, to the bottle of whiskey. It was OK-ish, but a bit on the heavy side.

This year I've decided on damson gin. The worry, at the moment, is that the damsons are really quite tart, and I'm wondering if it will make a difference, or is it just a case of a tasting or two, and then add more sugar, to taste? I've also noticed that after a fortnight, it's still rather pale, and from memory, last year's whiskey was darker, though that could have been the fact that the whiskey had a colour of its own, to start with.

Advice gratefully received!!
