This is very odd but I noticed my horse has a bit of grass in her eye. I tried to get it out (after washing my hands of course) but couldn't get it, bless her she stood like an angel as I poked about at her but couldn't get it. I didn't want to poke around too much incase I caused any damage to her eye but am worried the grass will cause irritation? Should I be concerned or will the eye flush it out itself?

I would have rung the vet straight away. You should never try to pick things out of eyes, if you must have a go yourself attempt to flush it out with some saline solution, but problems with eyes are best left to professionals to deal with.
