Horse throwing head about

My mare has recently started throwing her head up when being ridden. She does it in walk, trot and canter. Its not really agressive and not enough to make me untable or unseat me.
Thinking about it Im near on positive it started when I changed her bit for a smaller one. She was in a 5 1/2" Frnch link snaffle now in a 5" french link. Could this be the cause? or is it just coincidence?
Ive also noticed that when I take her bridle off the side of her mouth (where the bit rings sit) are pretty wet which I never noticed with the bigger bit.

Other things are the usual checks - teeth, back, tack, etc

But whats causing the wetness around the bit rings?

Prob just producing more saliva due to stress? Don't really know! Mine throws his head out of habit now because previous owners let his teeth grow too much.
