Can you tell me what hedge if any horses will not eat or nibble off the green shoots. I am told that they do not like laurel, is this true?

Don't think you should let them eat Laurel, not sure , but in the back recesses of my tiny mind, I think they are poisonous!!!!

Someone correct me if I'm wrong!

Maybe it's the quantity that they eat. Don't know, but, I would keep them away from the laurel

Generally the hedges they don't eat are the ones that they shouldn't and so not suitable to be used for hedging.
Laurel is definately poisonous - maybe the green shoots aren't so bad.

Clydesdale eats ANYTHING!! I have had to hot wire all around my paddock as property owner is a tree fiend - we have them everywhere and Serenity thinks he's planted them for her benefit. Electric fencing was cheaper than replacing the trees.
