How do you know how fit your horse is?

This may be a really stupid question but my boy was completely out of work & on box rest from last Feb until August & then only back in full work since October. He is now ridden 5-6 times per week, schooled approx 3 times per week for approx 30-40 mins & when hacked out we do quite a bit of trot & canter while hacking. The reason I ask is because I notice when schooling that a lot of the other horses/ponies finish work & are sweaty but my boy never breaks in to a sweat.. I'm in the menage the same ammount of time as the other horses & seem to do similar sort of work. Surely he cannot be that fit with that much time off? He's a tb, not clipped but has literally no winter coat.. thanks in advance.
 
some horses just naturally get hot and worked up - my mare only has to see the saddle for her to get hot - she just loves to get out and about town showing off.
 
maybe that's what is is then...the only time I have ever known him to sweat up was when I first got him his PO told me she thought he'd never jumped which I didn't believe so tried him out..he did jump & got incredibly excited & sweaty but his PO hadn't been rugging him either so he was like a fury bear..
