How good do I need to be?

It's a very different sort of riding to getting on a school horse and having a lesson if that makes sense! You need to be very confident in your ability to ride at speed and be confident enough that you don't really need to think about the riding, you just concentrate on the ball and how the game is moving. In some ways it's more of a western style of riding, you neck rein the horses, they learn to go and turn from changes in your weight and the pressure of the reins on their neck. Having said all this though I've seen people have polo lessons that have never sat on a horse in their life!

Not very good at all! I played at uni and we had people playing who had never ridden before, it doesnt make a huge amount of difference! As long as you are honest upfront about your ability it wont be a problem
