for grass livery on a yard with no sandschool yet (one being built shortly) in the sussex area, right on the border of the south downs, very little road work to get access to miles off good hacking. Secure tackroom and owner lives onsite.

To include:

am rug change & feed

Pm rug change & feed

Poo picking

above for 7 days per week.

Is it to include hay and hard feed or are you expecting owners to purchase their own?

Is there a school nearby which could be hired?

As a guide a friend in Kent pays £12 a week for a field with water but has to do her own fencing and has very little storage. If it was including feed, hay, daily care and poo picking but without a school or any undercover tie up I think you'd struggle to charge any more than about £50 a week unless they were retired horses.

I'm afraid I wouldn't consider anywhere without under cover tie up or access to somewhere to school.

For what you have said is included in Sussex I have friends on similar (near the Downs) paying between £65pcm and £85pcm.
Once the school is built and for all the rug changing etc i would suggest more towards the £85pcm mark.

I looked for resting full grass livery in Surrey/Sussex and couldn't find much under £180pcm with everything done and hay in winter. Ended up sending mine to Devon where its £140pcm all included.
If you cost your labour at £3/day/horse and field at £15pw/horse you're already at £150pcm without any hay and feed. Wouldn't have thought its worth doing for less than £180 if you have to do poo picking too.
Denbies in Surrey do full grass livery with better facilities at £250pcm, probably more expensive area but gives you an idea.
