How to build up muscle on the lunge?

My mare is 25/27ish and she is still ridden. How can I help her to build up muscle while on the lunge?
Because she is old, her back has dipped a abit and she has lost some muscle from her shoulders and chest. Ive done walk/trotting/cantering (the simple stuff) but are there any excercises etc that I could do to build her muscle up ?

Working correctly is what builds up muscle. But if she's old, I wouldn't worry about it, if she's being ridden, just enjoy that. Unfortunately, old horses backs do dip, there is no need to try & get it back. I'd also be very careful on the lunge with an older horse, just like you would with a youngster.
 
normally I'd be asking whether you are using side reins as they make a big difference in ensuring the horse is working properly and building muscle, but not sure it's such a good idea for a horse of that age...
