How to help a horse that worries?

The horse that I share is a real worrier, when he is unsure of something he'll become quite mouthy so will toss his head round, barge you and try to bite.

This morning we had a saddler out to check his saddle and because it was a new man he did all the above. It was definately worry so I don't want to get after him as it'll only make the situation worse! At the moment we deal with it by calmly telling him no, asking him to step away from us or ignoring him, does this sound right?

My friend and I have owned him since last sept, he is ex riding school and was ridden by alot of men. The riding school was really not the best place for a horse like him and I think this morning he prob thought the guy was going to get on him.

He is a shire x cob - 13yrs old
 
I have a stressy pony, that most of the time is foot perfect, but sometimes gets himself in a right tizz, and will ignore anyone or anything in his way. (Barges out of his stable, tramples you if you happen to be in the way - he even broke his stable wall down once he barged against the shut door so violently)
Nothing in particular seems to trigger his "episodes" (except the hunt going past!) but I feed a handful of dried chamomile flowers every day and it has seemed to take the edge off him, and his episodes are getting fewer and further between.
Not expensive, and natural, worth a try if you haven't done so already.

Routine routine routine!
Horses like this need routine to keep them happy and assured.
Remember you haven't had him that long so it will still take time for him to trust you completely.
A calmer may help to keep his nerves at bay but I find once they trust you and are in a routine they find it easier to accept something out of the ordinary. I.e a saddle fitter man!
 
As above , really but I would also be sure to have his back. saddle and teeth checked as pain can often be mistaken for stress.
Sometimes, though, a horse just needs time.....
