Hi

This might seem a bit random but this year we have to make a pressie for my in-laws instead of buying them anything. So i thought i would make a Christmas Cake.
I've never made one before so i had a mooch on the web and although there are loads of recipes, they all contain alcohol...either brandy, sherry or rum.

My farther in-law is a recent tea-total and i don't want my cake to be the thing that knocks him off the wagon!!! :D

Do you know of any Christmas Cake recipes that don't contain alcohol and what do you use instead to keep the cake moist?
Most of the recipes tell you to "feed" the cake over the weeks with a spoonful of the Brandy so is there something else i could use?

Thanks everyone

PS to keep it horsey...I'm organizing a Christmas Show for December 19th for the kiddy winks on the yard. Do i dress up as an Elf or Santa?

I add 1 or 2 tbsp of liquid glycerine when I add the treacle. Keeps it lovely and moist. Think Dr Oetker (sp) make it. its in the baking aisle in supermarkets anyway.

Instead of adding alcohol when you bake the cake, i add good quality apple juice.

Comes out lovely!

I prefer cakes with brandy in, myself, but my father in law is also tee total. So I make a little one for him for christmas, and make a big boozy one for everyone else!
