How to stop horse going behind the vertical especially in canter?

Have a lovely ex racer who is coming along really well and improving greatly. She is now more consistent in all paces, however she has recently taken to going behind the vertical and burying herself in the canter. If that makes sense?
When she does this i usually bring her back to trot or walk then ask for the canter again. Is this right?
Do have regular lessons and will be discussing with instructor next lesson.
Horse is ridden in happy mouth snaffle with peanut for flatwork and a happy mouth gag with same mouthpiece for jumping. She only does this in the snaffle. Considered change of bit but want to sort it through schooling if possible.
 
Mine can do this when he's excited, uses it as a way to lean in canter. If I pick up my hands, half halt, sit back and put my leg on, that seems to help!
 
The canter probably isn't forward enough and that's why he drops behind. Rather than back to trot, ask for a bigger more forwards canter. Mine nods when he's not in front of the leg.
 
I've just been reading Phillipe Karl's modern truths of twisted dressage. There's a section in horses that lean on your hands and go over bent. Better if you read the whole book though.
 
Oh and I've been using the techniques for my ex racer share and he's going beautifully, although we're still sorting walk and trot, but the book makes sense and is easy to read.
