Hunt Hedge Suggestions?

This is more a garders question really! I'd like to build a jump between two field and so want to plant some hedging to jump. So it mustn't be poisonous, don't want it prickly, mustn't be complicated and needs to like chalk soil. Any suggestions?
 
I was tempted to suggest lavender, which can make a neat, dense low form and would be calming on both horse and rider when you jump over, but then recalled the thousands of angry bees who congregated round our bushes this summer. So scrap that - my vote is also for beech.
 
Depends whether you want something to retain its leaves in winter. When I wanted hedging for round my garden I went and picked the brains at the local tree/hedge nursery (they do the motorway planting and insurance work when some *** has ploughed through into a field). They were very helpful and actually the price they quoted for planting bare root plants was very reasonable. You might have to water for the first summer if there is a dry one.
 
Thank you for answers - they made me laugh as well as being helpful! I like the idea of hazel nuts. Though beech does grow really well on the chalk. Oh and I didn't mention - I want something to grow to about err... 2 foot 6 only!
 
Keeping hazel and beech to 2'6" might be a challenge :) ..how about cotoneaster? Added bonus will be berries for birds and bees love the flowers ( as do wasps!) and lots of different types to chose from and it doesn't grow very fast I think.
