Ride as many different (safe) types as you can and maybe go for some work experience at different yards where they offer a breaking service - watching the process and how people's methods vary will be invaluable!

Why don't you try and help out at a reputable dealing yard? You need experience with lots of different types of horses and you can learn so much just by watching.
